In 2020 (someone asked if I had ever tried roasting RAW CACAO beans in the coffee roaster. Really? What? You can DO that? And then the final question; WHY would you do that?
Curiosity took over and I purchased a 5 pound bag of raw, unroasted cacao beans – heck, I can’t even remember what varietal it was! BUT I roasted them…… and ….. then….. I fell in love! Now I had to figure out WHAT I was going to do with them.
Five years later, and a LOT of learning and networking, I’m making chocolate full time!
It’s been a journey, from starting out of own home kitchen to becoming a licensed retail facility and now growing our production environment. I can say without a doubt this has to be the most fulfilling endeavor I’ve undertaken – EVER.
